If you’ve only had sopapillas for dessert, wait until you try them like this! They’re crispy and golden on the outside, pillowy and soft on the inside, and stuffed with cheesy ground beef in two delicious ways: red chile and Hatch green chile. Trust me, the hardest part is choosing a favorite! ❤️💚
Sopapillas
* 4 cups all-purpose flour
* 1 tablespoon sugar
* 1 tablespoon baking powder
* 1½ teaspoons salt
* 4 tablespoons shortening
* 1½–1¾ cups water
Red Chile Ground Beef Filling
* 1 pound ground beef
* ¼ white onion, finely diced
* 2 garlic cloves, minced
* 1½ cups beef broth
* 3½ tablespoons New Mexico chile powder
* ½ teaspoon ground cumin
* ½ teaspoon dried oregano
* Cayenne pepper, to taste
* ½ teaspoon black pepper
* ½–¾ teaspoon salt, or to taste
* 2 tablespoons all-purpose flour
* Cheese, for stuffing
Green Chile Ground Beef Filling
* 1 pound ground beef
* ¼ white onion, finely diced
* 2 garlic cloves, minced
* ½ teaspoon each ground cumin and dried oregano and black pepper
* ½–¾ teaspoon salt, or to taste
* 2 tablespoons all-purpose flour
* 1½ cups Hatch green chile
* 1 cup chicken broth or water
* Cheese, for stuffing
