Caramel apple filling—for the cake and empanadas
6 large Granny Smith apples, peeled, cored and diced small
5 tbsp unsalted butter
½ cup plus 2 tbsp packed brown sugar
3 tbsp granulated sugar
1½ tsp apple pie spice
Pinch of salt
1½ tbsp cornstarch
1½ tbsp water
1 tsp vanilla extract
Caramel apple churro cake—8 × 8-inch pan
4 tbsp unsalted butter, melted
1 cup all-purpose flour
½ cup granulated sugar
1½ tsp baking powder
¼ tsp salt
¾ cup whole milk
1 tsp vanilla extract
Approximately 2½ cups prepared caramel apple filling
Churro topping
¼ cup granulated sugar
1½ tsp ground cinnamon
Carame apple empanadas—8 empanadas
8 empanada discs
Approximately ¾ cup prepared caramel apple filling—1½ tbsp per empanada
1 large egg
1 tsp water
Cinnamon sugar, for sprinkling
For serving, optional
Vanilla ice cream
Caramel sauce
