INGREDIENTS
For my Instant Birria
* 2 ½ -3 lbs chuck pot/tender roast
* 4 cups beef broth
* 7 guajillo or New Mexico chile pods, stemmed and seeded
* 2 chile pasillas
* 2-5 chile de árbol pods
* 5 garlic cloves
* 4 bay leaves
* ½-inch cinnamon stick
* 2 tbsp vinegar
* 1 tbsp salt and more to taste
* 1 tsp oregano
* 1 tsp whole black peppercorns
* ½ tsp whole cumin seeds
* ½ tsp thyme
* ¼ tsp ground ginger
* 8 whole cloves
For the Mini Birria Tortitas (Sliders)
* slider buns
* Oaxaca cheese or mozzarella cheese
* 6 tbsp Butter, melted
* Chopped cilantro
* Finely diced onion
* Consomé, for dipping
