Here is a little story of how I got to make this amazing Ethiopian flat bread. I never knew it was this easy to make!
I have always fallen in love with injera every time I try it from my friend’s kitchen or an Ethiopian restaurant. Today I am making it for the first time with my Ethiopian friend and we are showing you a simple way to make it at home.
Ingredients
5 cups teff flour
Warm water
1 tablespoon yeast
Sparkling water
Method
1. In a large bowl, mix teff flour, yeast, and warm water until smooth.
2. Add extra water to cover the batter completely.
3. Cover with cling film or a lid and leave in a warm place for 3 to 4 days to ferment.
4. After fermentation, remove all excess water.
5. Add sparkling water to create a medium-thick batter.
6. Cook the injera in an electric injera maker or a non-stick stove pan until ready.
