Spicy Oklahoma onion burgers on the Blackstone griddle—thin-sliced onions, fresh hot peppers, crispy smashed beef, and two kinds of melted cheese. We’re taking one of my favorite smash burgers and giving it a little attitude, y’all!
I’m using 80/20 ground chuck, American cheese, pepper jack, pickles, and my homemade Hussey burger sauce to build these doubles. Along the way, I’ll show you how thin to slice those onions, the griddle temperature I’m working with, how to get those crispy edges, and my trick for steaming the buns right on the burgers. Those pepper fumes about ran me off, but was the finished burger too hot? We’re fixing to find out.
