Pour the sauce… and a Radiohead album cover appears 🌊🎶
Chef Nick Beardshaw built this dish, A Moon Shaped Pool, out of his love of Radiohead. As the sauce melts the pool, it reveals the dish underneath. He first tried thin sheets of cocoa butter set between two CD cases, but they were too temperamental to risk in front of millions of Great British Menu viewers.
The final dish won the fish course on Great British Menu 2023 with a perfect 40/40, and it’s now on the menu at Starling, his restaurant in Esher, Surrey.
