We sat down with the founder of Ivan Ramen at his Farringdon restaurant in London for some quickfire ramen questions (they weren’t that quick). Thick or thin noodles? It depends on the soup. Tonkotsu is a style of broth, so the real choice is tonkotsu or paitan. Best ramen he’s ever eaten? His own, of course.
His personal favourite is the shio ramen, but he doesn’t serve it in London because getting the proper dashi in the UK is a challenge.
