Description
This simple boiled pork with fresh herbs is one of many dishes we call ntxuag, which is the Hmong word for an appetizer, starter dish, or snack in this context. This dish is often paired with beer but can also be enjoyed as a meal with rice.
There are many dishes in Hmong culture called ntxuag, and this is one of them. It’s often served during ceremonies and special events. Traditionally, this dish tastes best when made with freshly butchered pork, using cuts with a good meat-to-fat ratio. The pork is boiled, cut, seasoned, and mixed with fresh herbs. It’s then served first thing at the dining table for the men to snack on alongside beer while the head of the household conducts negotiations or during the time set aside to show appreciation and gratitude to the guests who came to help out during that special event. However, this dish can be enjoyed all year round and can also be made with good-quality pork from your local grocery store. It’s super easy to make and delicious, so give it a try!
