Corn season is coming to a close, so I had to make these corn rice cakes before they’re gone for the season! These are one of the many types of rice cakes we love to make and eat in the Hmong culture. They make their appearance at many Hmong markets that sells food, Hmong New Year celebrations, or simply at family gatherings. These are one of my grandma’s favorite ncuav to make, especially during corn season. They’re sticky, soft, chewy, full of corn flavor, a little coconutty, and have just the right amount of sweetness.
