In this video, I’m showing you how to make a crispy and delicious Stone Kadaif (Taş Kadayıf), a traditional Turkish syrup dessert with a perfectly crispy outside and a soft, syrupy inside.
This easy homemade recipe uses simple ingredients and delivers an amazing result. If you love Middle Eastern and Turkish desserts, this one is a must-try!
🧾 INGREDIENTS
For the Syrup:
4 cups sugar
4 cups water
A few pieces of citric acid (or a few drops of lemon juice)
For the Batter:
6 cups warm water
2 tablespoons sugar
1 tablespoon dry yeast
2 cups semolina
3 cups all-purpose flour
For Filling:
Walnuts (or pistachios / hazelnuts)
For Frying:
Sunflower oil
👨🍳 HOW TO MAKE STONE KADAIF
Prepare the syrup first and let it cool completely (it must be cold).
Mix warm water, sugar, and yeast. Let it activate.
Add semolina and flour, whisk until smooth and creamy.
Let the batter rest for 30 minutes to ferment.
Cook small rounds in a lightly greased pan (cook only one side).
Add filling (walnuts), fold, and seal.
Fry in hot oil until golden.
Place immediately into cold syrup for about 1 minute.
🔥 TIPS FOR PERFECT KADAIF
Syrup must be cold, desserts must be hot
Do not over-fry (keeps it crispy outside, soft inside)
Let the dough ferment properly
You can freeze uncooked kadaif for later use
