Today I enjoyed:
- A few Jamaican lilikoi (passion fruit) from my vine
- An entire Mamey Sapote from my tree
- 1 L of freshly squeezed orange juice (also from my trees)
- 4 homemade summer rolls filled with marinated tofu, avocado (homegrown), vermicelli noodles, veggies (red & Chinese cabbage, carrots, onions, tomatoes, & peppers), and peanut sauce.
Peanut Sauce Recipe:
1/4 C Apple Cider Vinegar
1/8 C Tamari or Shoyu
1/2 C Peanut Butter (crunchy highly recommended)
5-6 Deglet Dates (pitted)
2 cloves Garlic
~1/4 cup water (more if you want it thinner)
Blend and enjoy!
