Description
It's Croctober, friends! And today we're making one of my favorite autumn comfort foods: Hurst's 15 Bean Soup in the slow cooker.
There's something wonderful about taking a simple pantry staple and turning it into a warm, nourishing meal for the family.
In today's video, I'm sharing how I prepared my 15 bean soup with onions, garlic, herbs, homemade chicken broth, and a little leftover ham from the freezer. And because a good bowl of bean soup deserves a little cornbread, I'm sharing a few moments of making skillet cornbread, too!
One of the things I love about slow-cooker meals is that they give us time to tend to other things around our homes while supper is cooking.
Ingredients I Used
- 1 package Hurst's 15 Bean Soup
- 1 onion, diced
- 2 cloves garlic, minced
- Butter and olive oil, for sautéing
- Thyme and oregano, to taste
- 4 cups homemade chicken broth
- 4 cups water
- Approximately 1 cup cooked ham (optional)
- 1 can (15 oz.) diced tomatoes
- 1 teaspoon chili powder
- 1 tablespoon lemon juice
**A note about preparing dried beans:** Always follow appropriate food-safety guidance for the beans in your mix. Dried kidney beans require a vigorous boil before slow cooking; slow-cooker heat alone may not be sufficient.
