Rich, sweet, savory, and packed with authentic Cantonese flavor, it's the perfect marinade for juicy, caramelized Chinese BBQ pork (Char Siu).
The secret ingredient is red fermented bean curd, which gives Char Siu its signature flavor and aroma. Don't have any? You can substitute it with 1 tablespoon of miso paste. For the classic bright red color, use red yeast powder, or simply add a few drops of red food coloring if you prefer.
One batch is enough to season 2½ pounds (1.1 kg) of pork, and the sauce keeps well in the refrigerator for up to 1 month, making homemade Char Siu easier than ever.
