Upside Down Pear Cake 🍰

Sponge ingredients:
170g plain flour
1 & a half tsp baking powder
1 tsp vanilla extract (optional if you have it!)
120g butter (I used vegan butter but use whatever you fancy)
100g caster sugar
130 g pear purée (peel and cut
a pear and blend well into a puree ) 1 large pear should yield 130g or there abouts.

Bottom ingredients
2 washed pears sliced thinly
2 dollops of butter (60g) - I used vegan you can use any type you want.
2 tbsp caster sugar

METHOD
Line a baking tin (ether a 8cm round tin or a 8” /6” square tin) this is crucial to line first.

Bottom:
Place the pear slices along the bottom of the tin spreading them out and covering the entire bottom of the tin.
Add the butter into a small saucepan and melt over low heat.
Once melted stir in the sugar and a
Quickly drizzle this sweet butter mixture over the sliced pears.
Place to one side while you prepare the sponge.

Sponge:
Preheat the oven to 180•C
Add the butter, sugar and vanilla extract into a bowl and combine well into a smooth paste like texture.
Add in the flour, baking powder, pear purée & mix into a thick smooth batter.
Spoon this batter over the pears into your lined tin and spread it out evenly.

Place in the preheated oven for 40-45 mins until golden in colour.

Let sit for 10-15 minutes.

When you’re ready to turn the cake, place a board or wire rack on top of the tin using both hand securely turn the tin and wire rack 180• degrees and place onto a counter top. The tin should glide off easily and when you lift up the parchment paper the pears will be perfectly set into the cake. Revealing the crispy, golden top and edges. Serve with ice cream or cream/ custard. ENJOY
