🥒✨ INGREDIENTS
400g all-purpose flour
250g zucchini
70g Greek yogurt
15ml extra virgin olive oil
8 g salt
12g instant baking powder for savory recipes
🥒✨ METHOD
1. Cut the zucchini into chunks.
2. Cook the zucchini in boiling salted water for about 5 minutes.
3. Transfer them to a bowl of ice water to cool, then drain and blend until smooth and creamy.
4. In a large bowl, combine the flour, instant baking powder, Greek yogurt, olive oil, and salt.
5. Add the zucchini purée.
6. Mix first with a spoon, then knead with your hands.
7. Work the dough until it becomes soft, compact, and easy to handle.
8. Divide the dough into several portions and shape them into flatbreads.
9. Cook the flatbreads in a lightly oiled, hot non-stick skillet with a lid on.
10. Flip them halfway through cooking and cook until golden brown on both sides before serving or filling as desired.
