Ingredients:
1 tablespoon extra-virgin olive oil
4 garlic cloves, minced or 4 teaspoons minced garlic
5 oz. baby spinach
8 oz. cream cheese, softened
1-1/2 Cups Muenster or Gouda cheese, shredded (6 oz.)
1-1/2 Cups Parmesan cheese, grated (3 oz.)
1 ⅓ cups Marinated Artichoke Hearts, chopped (12 oz.)
1 cup Light Mayonnaise
1/4 teaspoon Black Pepper
1/4 teaspoon cayenne pepper
Directions:
1. Heat oil in a skillet or pot over medium-high heat until shimmering. Add
garlic and cook until fragrant, about 30 seconds. Add spinach, 1 handful at a time, allowing each to wilt slightly before adding next; cook until wilted and liquid has evaporated, about 4 minutes.
2. Off heat, add cream cheese and stir until melted and combined. Stir in muenster, Parmesan, artichokes, mayo, black pepper, and cayenne until combined. Transfer to 1.5 quart (8x8 in.) baking dish and smooth over top.
3. Bake in a preheated oven at 400F until golden brown and bubbling
around edges, about 20 minutes. Let cool for 10 minutes. Serve.
