Today I’m sharing one of our new favorite recipes: Crispy Low-Carb Chicken Parmesan Patties! Instead of using whole chicken breasts, we’re making juicy, flavorful patties with ground chicken, a crispy pork panko and Parmesan coating, no-sugar-added marinara, and lots of melty mozzarella cheese.
This recipe was inspired by my daughter, Emily. We’re both on a journey to nourish our bodies through real food. Emily is following a PCOS-friendly lifestyle, and I’m eating this way to help support insulin resistance and my healing journey after being diagnosed with severe iron-deficiency anemia. Different reasons, same goal: feeding our bodies well without giving up comfort food.
This recipe is high-protein, low-carb, family-friendly, budget-friendly, and absolutely delicious. If you’ve been missing chicken parmesan but want something that better fits your goals, I think you’re going to love this one.
