The combination is fantastic! The rich, almost buttery eggplant works beautifully with the sharpness of the feta and the freshness of the salad.
This is the sort of food I love across the Middle East. Simple ingredients, bold flavours and absolutely no need to overcomplicate things.
Serve it with warm flatbread, alongside grilled meats or simply enjoy a generous plate on its own.
