Recipe is below:

CHINESE ROAST LEMON CHICKEN

This recipe is still delicious without the salted lemons. This recipe made with a free range chicken but a regular chicken can also be used.

1 free range chicken (or regular chicken)
6 tbsp. cooking oil
1 to 2 tsp. salt
1 tsp. sesame oil
1 to 2 tsp. 5 spice powder
3 tablespoons chopped ginger
2 tablespoons chopped garlic
3 star anise
1 stalk green onion
3 to 4 Vietnamese salted lemons salted

Put the chicken on a tray.
In a bowl, mix all the ingredients in the cooking oil, except the salted lemons. Put 2/3 of the mixture into the cavity of the
chicken. Rub the remaining 1/3 of the mixture over the outside of the chicken.

Slice the salted lemons and squeeze all over the outside of the chicken. If you don't have salted lemons, just squeeze the juice of 1/2 a regular lemon over the outside of the chicken.

Preheat the oven to 400 degrees. Total cooking time is about 50 minutes. Cook the chicken for 25 minutes at 400 degrees. Turn the chicken tray around for more even cooking. Finish cooking the chicken for 25 minutes at 325 degrees. For a larger chicken, cooking time is longer.

Optional: If you want to put some honey to sweeten the taste against the lemon, just mix 3 tablespoons of honey with 1 tablespoon water in a bowl. Spread the honey water on the chicken in the last 15 minutes of cooking.
