* 1 cup ripe bananas mashed
* 1/2 cup unsalted butter, melted and slightly cooled
* 3/4 cup brown sugar
* 2 large eggs, room temperature
* 1 teaspoon vanilla extract
* 1 1/2 cups gluten-free flour
* 1 tsp baking soda
* 1/2 tsp salt
* 1/2 cup sour cream
* 1 cup chocolate chips
1. Preheat your oven to 350°F and grease a 9x5 inch loaf pan or line it with parchment paper.
2. In a large bowl, mix the melted butter with the maple syrup until well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and mashed bananas until the mixture is smooth.
3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined
4. Fold in the sour cream, then fold in the chocolate chips, and don’t overmix
5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 60-70 minutes
6. Allow the bread to cool in the pan for about 10 minutes
