PID stands for Proportional-Integral-Derivative, and it's essentially a tech that allows you to set your espresso machine to a consistent brewing temperature to avoid temperature surfing and temperature swings while brewing.
This feature is important because it affects how your espresso is extracted. If your espresso tastes sour or thin, it is likely under-extracted, and raising the temperature can help bring out more body and sweetness. Conversely, if the shot tastes harsh, dry, or overwhelmingly bitter, it is over-extracted, and lowering the temperature will help tame those flavors.
