š„ Tortilla Kebabs with Garlic Butter & Tzatziki
A fun twist on classic kebabs. Crispy tortillas, smoky seasoned beef, garlicky butter, cool tzatziki, and a fresh tomato-cucumber saladāthis one's guaranteed to impress.
Ingredients
⢠1½ lb ground beef (80/20)
⢠6 flour tortillas
⢠1 tsp each: kosher salt, black pepper, cumin, garlic powder, smoked paprika
⢠½ tsp dried oregano
⢠½ grated yellow onion
⢠3 cloves garlic, minced
Garlic Butter
⢠4 tbsp melted butter
⢠2 cloves garlic, minced
⢠Pinch of salt
Tzatziki
⢠1 cup Greek yogurt
⢠1 Persian cucumber, grated & drained
⢠1 garlic clove, minced
⢠2 tbsp chopped dill
⢠1 tbsp lemon juice
⢠½ tsp salt
Tomato-Cucumber Salad
⢠Roma tomatoes
⢠Persian cucumber
⢠Red onion
⢠Parsley, mint & dill
⢠Red wine vinegar
⢠Olive oil
⢠Salt & pepper
Method
1ļøā£ Preheat your Traeger to 450°F with Hickory pellets.
2ļøā£ Mix the beef with the seasonings, grated onion, and garlic.
3ļøā£ Trim tortillas into squares. Spread each with a thin layer of beef, stack them, then cut into 9 rectangles. Skewer through the layers.
4ļøā£ Grill for 10ā12 minutes, flipping once and brushing with garlic butter halfway through.
5ļøā£ While the kebabs cook, stir together the tzatziki and toss the tomato-cucumber salad.
6ļøā£ Brush the finished kebabs with more garlic butter and serve alongside the tzatziki and salad.
