Description
The internet made us do it, and we ain't mad about it.
Chicken Au Poivre has been taking over our feeds, so we had to give it the Traeger treatment.
Golden, crispy-skinned chicken thighs swimming in a rich, creamy peppercorn sauce. All made in a cast iron skillet on the Traeger.
Here's what we did:
Preheat: Fire up your Traeger to 425°F with a cast iron skillet inside.
Season & Sear: Season chicken thighs generously with salt and cracked black pepper. Add butter to your hot skillet and sear the thighs skin-side down until golden brown. Flip to sear the other side.
Build the Sauce: Add minced garlic, shallots, fresh thyme, heavy cream, and plenty more cracked black pepper. Stir everything together, scraping up those flavorful browned bits.
Finish: Let everything cook until the sauce thickens and the chicken reaches at least 165°F internal. We aimed for around 30 minutes total, but cook to temp, not time.
Serve: Spoon that creamy peppercorn sauce over the chicken, add some more pepper and thyme, and dig in.
