🍩 Dough Ingredients
* 180g all purpose flour
* 340g low fat cottage cheese
* 1 egg
* 1 egg yolk
* 64g protein powder
* 1 tsp vanilla extract
* 1/2 tbsp baking powder

🍯 Cinnamon Sugar Ingredients
* 1/5 cup swerve brown sugar
* Cinnamon

🧁 Cream Cheese Frosting
* 90g lite cream cheese
* 1 tsp vanilla extract
* 16g protein powder (OPTIONAL for extra protein)
* 1/4 cup powdered monk fruit

👨🍳 Instructions
1. Preheat oven to 180°c
2. Blend wet dough ingredients (in a blender), then add to a bowl.
3. Mix in dry ingredients until fully combined.
4. Dump dough onto a floured, flat surface.
5. Sprinkle with a bit of extra flour on top and PAT DOWN. This will avoid sticking as dough WILL be sticky.
6. Pour cinnamon sugar on top and spread evenly.
7. Roll the dough up and slice into 4 giant cinnamon rolls.
8. Bake for 25 minutes.
9. While baking, mix icing ingredients in a bowl until no lumps remain.
10. To remove lumps, consider adding a splash of milk or water and going at it with a whisk.
11. Let the giant cinnamon rolls cool, smother in icing, and you’re all done!
