Texas Style Smoked Spare Ribs - How To Smoke Spare Ribs On A Kettle Grill

TRY THIS EASY 3 STEP METHOD 1️⃣2️⃣3️⃣

1️⃣ Season ribs with kosher salt and coarse black pepper or your favorite salt and pepper based rub like @lanesbbq brisket seasoning and smoke at 250-275° for approximately 4 hours. Oak is preferable. Leave membrane on!

2️⃣ After a couple hours, place ribs on elevated grate over the coals to crisp membrane on underside for 10-15 minutes and then move ribs back to indirect side. Spritz once internal temp reaches around 180° with mix of equal parts apple cider vinegar and maple syrup or honey. Remove from grill when internal temp reads 200° and feels probe tender.

3️⃣ Wrap immediately in foil with a vinegar based bbq sauce like @blueshognation Champions Blend (or equal parts BBQ sauce and ACV) and rest at room temp in foil wrap for about 30-45 minutes to let the bark rehydrate and absorb the glaze. Flip over and slice from bottom side and enjoy!
