3 cups fresh corn kernels*, about 4-6 ears total
2 cloves garlic
1/2 of a fresh jalapeño
1 bunch cilantro
1 bunch scallions
1/4 cup cotija cheese
1/2 cup sour cream
1/2 cup mayo
2 whole chipotle peppers packed in adobo
1/3 cup fresh lime juice, plus the zest of 1 of the limes
Diamond Crystal kosher salt
