A fresh and light lasagna variation with zucchini, heirlooms tomatoes and ricotta.
Zucchini and tomatoes are still at the top of the season so I took advantage of this Autumn sunny days to still celebrate the summer. (I'm not ready for pumpkins and apples yet!!).
