MACARON BECHAMEL:
16 ounces tubular pasta or ziti

For the meat sauce

1 tablespoon olive oil

4 cloves garlic, minced

1 onion, finely chopped

1 pound ground beef (80/20)

1 teaspoon ground allspice

½ teaspoon ground cinnamon (optional; omit if you prefer your meat sauce without cinnamon)

1 (15-ounce) can tomato sauce

2 tablespoons tomato paste

Salt and black pepper, to taste

Bechamel Sauce

1 stick (½ cup) butter

¼ cup all-purpose flour

4 cups whole milk, warmed

¼ teaspoon ground nutmeg

Salt and black pepper, to taste

1 egg yolk

½ cup chicken broth

Boil 16 oz of tubular pasta or ziti for 10 minutes, then drain and set aside. To make the meat sauce, heat 1 tbsp olive oil in a skillet, sauté 4 minced garlic cloves and 1 finely chopped onion until softened, then add 1 lb ground beef (80/20), 1 tsp ground allspice, ½ tsp cinnamon (optional), salt, and pepper to taste. Brown the beef, then stir in one 15 oz can tomato sauce and 2 tbsp tomato paste. Simmer for 5 minutes and set aside.

To make the béchamel, melt 1 stick (½ cup) butter in a saucepan, gradually whisk in ¼ cup flour, and cook briefly while whisking. Slowly pour in 4 cups warm whole milk, whisking constantly until smooth, bubbly, and thick enough to coat the back of a spoon. Add ¼ tsp nutmeg, salt, and pepper to taste. For extra richness, whisk 1 egg yolk into ½ cup chicken broth, temper with a little hot béchamel, then slowly whisk the mixture back into the sauce over low heat until smooth.

To asemble, Mix 1½ cups béchamel into the cooked pasta. Spread half the pasta in a greased 13 × 9-inch baking dish, layer the meat sauce over it, then add the remaining pasta. Spread the rest of the béchamel evenly over the top. Cover with foil and bake at 375°F for 40 minutes. Remove the foil and broil on the top rack for 5–10 minutes, watching carefully until golden brown. Let rest for 20 minutes before slicing and serving. Enjoy this delicious Egyptian comfort-food classic!
