Recipe - Ingredients

For the suya spice (yaji):

4 tbsp roasted peanut powder (ground peanuts or peanut butter powder)
2 tbsp smoked paprika
2 maggi cubes
1 tbsp cayenne pepper or Dried pepper (adjust to heat preference)
1 tbsp ground ginger
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 tsp freshly ground black pepper

For the patties (makes 4 large burgers):

500g minced beef (ideally 80/20 for juiciness)
1 small onion, very finely grated
1 clove garlic, crushed
1 tsp Worcestershire sauce
2 tsp suya spice (from above)
1 tsp kosher salt (or to taste)
1 tsp honey
1/2 tsp black pepper
1 tbsp neutral oil (for pan/grill)

For the suya burger sauce:

4 tbsp mayonnaise
2 tbsp plain yoghurt (or sour cream)
1–2 tsp suya spice (to taste)
1 tsp lemon juice
1 -2 tsp honey or sugar
Pinch of salt and pepper

For assembly:

4 burger buns (brioche or soft white buns)
4 slices mature cheddar (or your favourite melting cheese)
Lettuce leaves, thinly sliced red onion, sliced tomato
Butter for toasting buns

For fries:

600g Maris Piper or King Edward potatoes, cut into fries

2 tbsp vegetable oil

1 tsp salt

Optional: 1 tsp smoked paprika or extra suya spice for dusting

Equipment

Mixing bowl
Grater or food processor
Frying pan or grill
Baking tray (for fries)
Oven or air fryer
Spatula
Thermometer (optional)
Method

Prepare the suya spice

Mix all suya spice ingredients in a small bowl until combined. Set aside.

Make fries and start baking

Preheat oven to 220°C (200°C fan)/425°F.

Rinse fries in cold water until water runs clear, then dry them thoroughly on a tea towel.

Toss fries with oil, salt and optional smoked paprika or a light dusting of suya spice.

Spread in a single layer on a baking tray and bake for 25–35 minutes, turning once halfway, until golden and crisp. For extra crispiness, increase heat for final 5 minutes or use an air fryer at 200°C for 12–18 minutes.

Prepare patties

Place breadcrumbs in a small bowl and sprinkle a tablespoon of cold water over them if they seem very dry—stir and leave for a minute so they soak slightly but aren’t soggy.

In a mixing bowl combine minced beef, soaked breadcrumbs, grated onion, crushed garlic, Worcestershire sauce, 2 tsp suya spice, salt and pepper. Mix gently—overworking will make the patties dense.

Divide mixture into 4 equal portions and shape into patties slightly wider than your buns, pressing a shallow dimple in the centre of each (helps them cook flat). Chill in the fridge for 10–15 minutes to help them hold shape.

Make the suya burger sauce

Whisk mayonnaise, yoghurt, 1–2 tsp suya spice, lemon juice and honey in a small bowl. Taste and adjust seasoning. Keep chilled until ready to use.

Cook patties and melt cheese

Heat a frying pan or griddle over medium-high heat and add 1 tbsp oil.

Cook patties for about 3–4 minutes on the first side without moving, until a good crust forms. Flip and cook 3–4 minutes on the second side for medium (adjust time for done-ness). Aim for an internal temperature of 70°C if you prefer well done.

A minute before the patties are done, place a slice of cheddar on each patty and cover the pan with a lid for 30–60 seconds to melt the cheese.

Toast buns and finish fries

Butter the cut sides of the burger buns and toast in a dry pan or under a grill until golden.

Remove fries from oven, check for crisp
