I had viazi ya tamu recently in #Mombasa, a roasted sweet potato with chilli and lemon drizzled on top. So simple, it made me think this British classic comfort food would get taken on a whole new level if it was lathered in Anchor Butter I mixed with chilli and lemon and let it melt all over the fluffy potato!

Seabass Fillet
Salt
Garlic
Chilli
Chilli Lemon Butter
Anchor Butter
Chopped Green Chilli
Cayenne Pepper
Salt
Lemon Zest
Sauce:
3 cups of coconut milk
1/4 teaspoon turmeric
1/4 tsp chilli powder
1/2 tsp cumin
2 cloves garlic
Pinch of Salt
2 tbsp of Tamarind juice/paste
2 red chillies
1 Baking Potato ( I used a Maris Piper )
