This Lime Carlota recipe is a simple Mexican dessert that looks amazing and will please pretty much anyone. As you saw, it is made with multiple levels of vanilla flavored cookies, covered in a sweet sauce, and is then refrigerated for a couple of hours to create a creamy ice cream like texture. I've heard some people call it a 'Lemon Icebox Cake" but for me, it will always be Carlota.
