Dhaba Style Dal Tadka
Preparation Time: 30 minutes
Cooking Time: 20 minutes
Serves: 3-4
Ingredients:
1 cup Toor (arhar) Dal
¼ cup Red Masoor Dal
½ tsp Turmeric Powder
1 tsp Salt
1 tsp chopped green Chilies
1 tsp chopped Ginger
2 tsp Red Chili Powder
½ cup chopped Onions
1 tbsp chopped Garlic
1 tbsp chopped Ginger
1 tsp chopped Green Chilies
4 tbsp Desi Ghee
1 tsp Cumin Seeds
½ cup chopped Tomatoes
2 Dry Red Chilies

Method:
Pressure cook the washed dals for 3 whistles with 3 cups water, 1 tsp salt, ½ tsp red chili powder, 1 tsp chopped ginger, 2 tsp chopped green chilies.
The Dals should be well cooked.
Heat 3 tbsp ghee in a pan. add 1 tsp cumin seeds. As the seeds splutter, add the chopped ginger, 1 tsp garlic and chilies. Sauté till fragrant and lightly colored. Add chopped onions and cook till the onion is lightly golden. Add the red chili powder, mix well and then add the chopped tomatoes. Cook till the tomatoes are mushy. Add the cooked dal to the pan and stir well. Cook for 2-3 minutes and remove to a serving bowl.

Sambar
Preparation time: 10 minutes
Cooking time: 20 minutes
Serves: 4
Ingredients:
1 cup Arhar/ Toor Dal
2 tbsp Oil
1 tsp Mustard Seeds
10-12 Curry Leaves
3 Dry Red Chilies
1/8 tsp Asafetida
1/2 cup chopped Onions
Diced Vegetables- Brinjal, Gourd
1 + 1/2 tsp Turmeric Powder
1/2 tsp Red Chili Powder
2 tbsp Sambhar Powder
1 cup Water
1/4 cup Tamarind Pulp
Salt to taste

Method:
Soak dal for 20 minutes.
Pressure cook the toor dal with salt, turmeric and 4 cups water for 7-8 minutes or until just cooked.
Heat the oil in a pan. Add the asafetida, mustard seeds, fenugreek seeds and red chili and sauté till the mustard seeds crackle.
Add the curry leaves and sauté for 20 seconds.
Add the chopped onions and sauté over medium heat till the onions turn a golden color.
Add the diced vegetables, salt and sauté well. Cook till the vegetables are half done.
Add the sambhar powder, water, cover and cook till the vegetables are almost cooked.
Now add the the dal, the tamarind pulp and cook till the raw smell of tamarind disappears. Serve hot.

Khati Aam ki dal
Preparation time: 10 minutes
Cooking time: 20 minutes
Serves: 4

Ingredients:
1 cup Dal
2 Raw mangoes
½ tsp turmeric powder
¼ tsp Hing
2 dry red chillies
½ tsp mustard seeds
½ tsp cumin seeds
Salt to taste
2 tbsp oil

Method:
Peel and slice the raw mangoes.
Soak dal for 20 minutes.
Pressure cook the toor dal with salt, turmeric and 4 cups water for 7-8 minutes or until just cooked.
Heat the oil in a pan. Add the asafoetida, mustard seeds, cumin seeds and red chili and sauté till the mustard seeds crackle.
Add the sliced mangoes and cook till they are tender. Add the dal and cook till the mangoes are pulpy. Serve.
