That it is important to eat seasonal vegetables is something we all know.
And one summer vegetable that many people don’t enjoy eating is Bottle gourd. It is also know as lauki, ghia or doodhi.
So here are 3 Breakfast Recipes you can make with lauki that everyone will enjoy and no one will come to know that they are made with lauki!

Recipes:

Bun Dosa
Preparation time: 15 mins
Cooking time: 7-8 mins per bun
Serves: 2-3

Ingredients:
For Batter:
1 Cup grated Lauki
1 cup Semolina
¼ cup Curd
Salt to taste
1 cup Water
1½ tbsp Oil
½ tsp Hing
1 tsp Mustard seeds
2 Green chillies, chopped
2 tsp Chana dal
1 tbsp Ginger, chopped
¼ cup chopped Onion
Curry leaves handful
Coriander leaves chopped
1 tsp White Sesame Seeds
1 tsp baking soda
1 tsp White sesame seeds
Method:
Grate the Lauki. We need 1 cup.
Add semolina, curd, salt, and water, and blend until you achieve a smooth paste.
Rest for 5 mins.
In hot oil, temper asafetida, mustard seeds, green chilies, chana dal, chopped ginger, onions, and curry leaves, then pour this mixture directly over the batter.
Add baking soda and mix well.
Next, heat oil in a round tadka pan. Pour the batter into the pan and flip it using a spoon once it firms up on the sides. Pour a little oil around the edges and cook until it turns golden brown.

Lauki Sandwich
Preparation time: 15 mins
Cooking time: 7-8 mins
Serves: 2-3

Ingredients:
1 cup lauki paste
2” ginger
2 green chilies
Salt to taste
1 cup semolina
½ cup yoghurt
1 tsp Eno
Filling of choice (boiled potato masala/ paneer/ cheese slice): Optional

Method:
Blend lauki with the ginger an garlic in a blender to make a fine paste. We need 1 cup paste.
Now add in the yoghurt, salt and semolina and blend again. Remove to a bowl and mix in the eno fruit salt.
Grease the sandwich plates with oil.
Pour 2 tbsp batter in a sandwich maker and place filling of choice. Cover with 2 tbsp batter and cover. Cook the sandwich till golden and crisp. Serve.

Lauki Vadi
Preparation time: 15 mins
Cooking time: 30 mins
Serves: 2-3

Ingredients:
2 cup lauki / bottle gourd, grated
1½ cup besan
¼ cup rice flour
1 tsp cumin
¼ tsp carom seeds
½ tsp chilli powder
½ tsp garam masala
2 tbsp sesame seeds
Salt to taste
¼ tsp hing
3 chilli, finely chopped
2 tbsp coriander, chopped
1 tsp ginger garlic paste
1 tbsp lemon juice
2 tbsp oil
oil, for frying

Method:
Take grated lauki, besan and rice flour in a large bowl.
add cumin, carom seeds, chilli powder, garam masala, sesame seeds, salt to taste and hing, chilli, chopped coriander, ginger garlic paste, ½ lemon juice and 2 tbsp oil.
mix well forming a sticky dough.
now transfer the dough into a greased square baking tray
Steam for 15 minutes or until the fork inserted comes out clean.
Cool completely, and cut into small cubes.
Shallow fry the vadis in medium hot oil till crisp on the outside.
Serve hot.
