Alaskan Style Pemmican, Smoking Caribou Sausage & Winter Ptarmigan Hunt

A quick trip to the freshly covered snowy mountains in hopes of spotting a winter caribou, no luck with the inclement weather but we did harvest a few ptarmigan for a warm meal back at the cabin. With things settling down a bit, we dig into the freezer and pull out some frozen berries, unrendered fat and caribou meat for sausage. The links go into the smoker for a few hours before packaging and we make a favorite winter treat of ours - pemmican, complete with caribou tallow, waterfowl jerky and Alaskan wild berries.
