½ cup short-grain or pudding rice
2 cups boiling water
1 litre milk
3 heaped tablespoons cornstarch (about ⅓ cup)
½ cup cold milk (to dissolve the cornstarch)
1 cup sugar
1 tablespoon vanilla
To be refrigerated and served cold
