Puran Poli with Toor Dal is a delicious twist! Here's the recipe:
*Ingredients:*
- 1 cup whole wheat flour (atta)
- 1/2 cup water (or as needed)
- 1/4 tsp salt
- Ghee or oil for cooking
*_For Puran (Filling):_
- 1 cup split pigeon peas (toor dal)
- 1 cup jaggery (gur)
- 1/2 tsp cardamom powder
- 1/4 tsp nutmeg powder (optional)
- Ghee for greasing
*Instructions:*
1. *Make Puran:*
- Wash and soak toor dal for 4-5 hours. Drain and cook with 2 cups water till soft.
- Mash cooked dal, add jaggery, cardamom, and nutmeg. Cook on low till thick like a paste. Cool.
2. *Make Dough:*
- Mix flour, salt, and water to make a soft dough. Knead well, rest for 30 mins.
3. *Assemble Poli:*
- Divide dough into balls. Roll one ball into a circle, place a spoonful of puran in center.
- Fold dough over, seal edges, and roll out gently.
4. *Cook Poli:*
- Cook on a hot tava with ghee or oil till golden on both sides.
*Tips:*
- Toor dal gives a slightly different texture, so adjust water in puran if needed.
- Add a pinch of salt to puran for balance.
- Serve with ghee or milk.
