Here's the Recipe!
1). Pick a decent size handful of mint. I have never measured or counted them, and I haven't ever made a batch that seemed off. Okay, if I really had to guess I would say maybe twenty, 6 inch sections.
2). Next heat the mint. I have done it in a crockpot outside on a hot day -- when doing that I put the tea bags in there too. In this video, I used the microwave -- just start by putting warm water in the mint glass and then heat it for 3 minutes. (Don't put your tea bags in microwave because there's a tiny metal staple in them).
3) When it comes out of microwave, add your 8 teabags and let it sit for two hours. If you do more than that, it's not a problem but the teabags and mint leaves won't keep releasing their flavors.
4). Add your 1/3 cup sugar (or 1/2 cup if you want it sweeter) and 3 tablespoons of bottled lime juice / fresh squeezed lime juice to your serving container, add warm water, and shake it up to dissolve the sugar.
5). Remove the tea bags after trying to squeeze as much liquid as possible from them.
6). Add the mint / tea concentrate to your serving container. I sometimes use a fine strainer for this part, but I lost mine when I did my maple syrup video. Sad. You could probably use a coffee filter too if you rubber band it around the top of your serving container.
7). Add ice and taste it. Add sugar or additional lime juice, as needed.
PRO-TIP: You can also freeze a block of the mint / tea concentrate instead of adding it to the serving container. It won't take up much space in the freezer before you've added the extra water, sugar, and lime juice. Then you can have mint tea in the winter too!
PRO-TIP 2: If you are thinking about growing your own mint, grow it in a large container or raised bed. It spreads like crazy; you don't want it freely growing in your garden.
