INGREDIENTS

• Eggs — 6
• Onion — 2 large, finely chopped
• Tomato — 2 medium, finely chopped
• Ginger garlic paste — 1 tablespoon
• Green chilli — 3, slit
• Turmeric powder — ½ teaspoon
• Red chilli powder — 1½ teaspoons
• Coriander powder — 1 tablespoon
• Garam masala powder — ½ teaspoon
• Fennel seeds — ½ teaspoon
• Curry leaves — 1 sprig
• Coriander leaves — 2 tablespoons, chopped
• Cooking oil — 3 tablespoons
• Salt — to taste

METHOD
━━━━━━━━━━━━━━━━━━━━━━━━━━━━━━
1. Boil the eggs in water for 8-10 minutes until hard boiled. Cool them in cold water, peel and set aside.
2. Make shallow slits on the boiled eggs and lightly fry them in 1 tablespoon of oil until golden brown. Remove and keep aside.
3. In the same pan, heat remaining oil and add fennel seeds. Let them splutter.
4. Add curry leaves and green chillies. Sauté for a few seconds until fragrant.
5. Add chopped onions and sauté on medium heat until they turn golden brown and translucent.
6. Add ginger garlic paste and sauté for 1-2 minutes until the raw smell disappears.
7. Add chopped tomatoes and cook until they become soft and mushy, stirring occasionally.
8. Add turmeric powder, red chilli powder, coriander powder and salt. Mix well and cook for 2-3 minutes until the oil separates.
9. Add a splash of water if the masala is too thick. Mix well and let it simmer for 2 minutes.
10. Add the fried eggs to the masala and gently coat them with the mixture. Cook for 2-3 minutes.
11. Sprinkle garam masala powder and mix gently without breaking the eggs.
12. Garnish with freshly chopped coriander leaves and serve hot.

TIPS

✔ Make shallow slits or prick the boiled eggs with a fork before frying to help the masala flavors penetrate better
✔ Don't skip the step of frying the eggs first - this adds a beautiful texture and prevents them from breaking while mixing with masala
✔ Cook the onions until properly golden brown for a richer, sweeter flavor in the final dish
✔ Adjust the spice level by increasing or decreasing red chilli powder and green chillies according to your preference
✔ For a richer gravy, you can add a tablespoon of cashew paste or coconut paste to the masala
