Description

A Dingle Butcher's shop makes Císte an Daingean, a specialty black pudding made to a secret recipe.

Curran's butchers on Green Street in Dingle are producers and purveyors of Císte an Daingean, a specialty black pudding made to a secret family recipe.

Noreen Curran demonstrates how to make this local delicacy, which consists of sheep's blood, breadcrumbs, onions, finely milled oats, suet and seasoning, which she describes as;

'A special mix.'

Císte an Daingean differs from other black puddings, as it is steamed in a round cake tin, and resembles a fruit cake when cooked.

The recipe has been handed down through the family for generations. Noreen’s mother Ellie Curran was widowed young and started making black pudding to earn an income. Customers were plentiful right from the start, and the popularity of this homemade has endured.

It’s nice to hold onto a tradition.
