Made with just a handful of ingredients, this classic Korean stew gets almost all of its flavour from well-aged kimchi. Simmered with your choice of protein, tofu and spring onions for a warming one-pot meal that's perfect with rice!
The secret? Use aged, sour kimchi—not freshly made kimchi. The longer it's fermented, the richer and deeper your stew will taste.

350 Pork collar
400g Sour kimchi
3 tbsp Kimchi brine
500ml Water
1 tbsp Gochugaru
1 tbsp Soy sauce
1 block Anchovy bouillon
1 block Firm tofu, cut into flat squares
½ stalk Green onion, chopped
½ Yellow onion, sliced into thin strips
