ingredients:
green curry paste:
85g rice bran oil
200g shallots
100g garlic
60g dried red chillies
20g galangal
100g lemongrass
6-8 leaves kaffir lime leaf
1 tbsp shrimp paste
3 tbsp coconut sugar
4 tbsp tamarind paste
2 tbsp fish sauce
fried rice:
2 tbsp green curry paste
100g chicken thigh meat, or breast meat
1 tbsp fish sauce
1 tsp sugar
1 pinch kaffir lime leaf
20g bamboo shoot
30g longbean
100ml coconut milk
20-30ml water
2-2.5 cups rice, cooked
1 bunch sweet basil
1-2 tbsp red chillies
