GARLIC BUTTER CHICKEN & CREAMY POTATOES

Ingredients:
For the Garlic Butter Chicken:

1.5 lbs boneless skinless chicken breast (680g), cut into bite-sized chunks

1 tbsp olive oil (15ml)

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika

1/4 tsp cayenne pepper (optional)

3 tbsp unsalted butter (42g)

3 cloves garlic, minced

For the Creamy Potatoes:

1.5 lbs baby red or gold potatoes (680g), diced into small cubes

1 tbsp olive oil (15ml)

1/2 tsp salt

For the Cream Sauce:

1/2 cup plain Greek yogurt (120g)

1/4 cup light cream cheese (56g)

1/4 cup low-fat milk (60ml)

1 tbsp Dijon mustard (15g)

1/2 tsp garlic powder

1/4 tsp onion powder

1/4 tsp salt

1/4 tsp black pepper

1 tbsp chopped parsley
