Recreating some of my favorite Disneyworld treats! Today we're making the Carrot cake whoopie pies from Hollywood Studios and the Caramel Pecan shortbread bars from the Germany pavilion at Epcot!

There isn't much better than Epcot for food. So picking just one to recreate to start with should be hard, but it isn't. These caramel shortbread bars with pecans were easily the top thing we eat every time we go to Epcot. Easy to recreate at home I still buy multiple bars every time.

My mom loves carrot cake, it was her wedding cake in fact, but it's one I never really got into. BUT because I know how much she loves it I bought this large whoopie pie for her when we went to Walt Disney World back in 2017 and I fell in love with them too! Since then these cookies have had a chance at the park, thicker and narrower with less frosting. So I'll show you how to make both.

CARAMEL PECAN SHORTBREAD BARS
makes 12 bars
SHORTBREAD
1 C butter softened
3/4 C packed light brown sugar
2 C all-purpose flour
1/2 C chopped pecans
Preheat oven to 350F.
In your mixer beat butter until fluffy.
Add brown sugar and mix well.
Add flour and mix - it will be crumbly
Stir in pecans
Spread into a 9x13 pan and press flat (use parchment paper overhanging on two sides to pull out later)
Bake for 20-25 minutes, until shortbread is lightly browned all over.
Let cool
SOFT CARAMEL
3/4 C butter
1/2 lbs packed light brown sugar
1/4 lbs white sugar
1/4 tsp salt
1/2 C light corn syrup
7.5 oz sweetened condensed milk
1 tsp vanilla
1/2 C pecans - whole or lightly chopped
in a saucepan dissolve the brown sugar, salt, and butter over medium heat
add the corn syrup and mix
pour in the sweetened condensed milk and stir
bring the mixture to a low boil over medium heat until it hits 240 degrees F on a candy thermometer (remember to adjust for your elevation)
NOTE -this makes a super soft caramel layer – you can cook to 250 if you want stiffer caramels
pour into the 9×13 pan over the shortbread
sprinkle with chopped pecans
let cool
pull out of the pan and cut into 12 bars 3x3

CARROT CAKE WHOOPIE PIES
makes 8 whoopie pies
CARROT CAKE COOKIES
3 cups unbleached all-purpose flour
2 1/2 teaspoons baking powder
2 teaspoon ground cinnamon
1/2 tsp ginger
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
2 tsp vanilla
1 - 1 1/2 pounds grated carrots
1 1/2 cups granulated sugar
1/2 cup packed light brown sugar
2 large eggs
2/3 C mayo
Preheat oven to 350
Whisk the flour, baking soda, baking powder, spices, salt
Beat the sugar, brown sugar, eggs and mayo until smooth
Stir in the carrots
Stir in the dry ingredients – don’t overmix
Add some batter to cookie sheets (2 large scoops each)
or bake in 4-inch cake pan - 2 scoops
Bake the cookie style for 17 mins and the cake style 20 mins
Place on a cookie rack and cool
CREAM CHEESE FROSTING:
16 ounces cream cheese, softened to room temperature
10 tablespoons butter, softened to room temperature
1 teaspoon vanilla extract
2 1/2 cups powdered sugar
Beat butter and cream cheese,
Add the powdered sugar and vanilla and beat until smooth
pipe onto half of the cookies and cover with the other half to create the whoopie pies
