Turns out, the best thing about Phuket isn't the beaches...it's moo hong! After this dish went mini-viral amongst my Patreon members in our Discord, I decided it was time to make a video. I was quite surprised to see how simple it is, with very few ingredients, because the flavour is just out of this world.
Phuket is the hub of Peranakan people in Thailand, and this is a Peranakan dish. You can find similar versions in Malaysia and Singapore, but the Thai one uses different aromatics, namely "saam gler" or what I call the Thai mirepoix, which is a paste made from garlic, peper, and cilantro stems/roots.
It's a simple recipe but you do need to pay attention to a few things. All of the tips for success are in the recipe!
