Description

A classic dish that's rich in flavor yet a soufflΓ©-like in texture. This popular corn dish has been a favorite staple (for generations) in the southeastern parts of the United States, especially in Appalachia. If you love fresh corn on the cob...you'll not be disappointed with this dish. ENJOY!! :)

OLD FASHIONED CORN PUDDING

12-14 ears fresh corn, husk & silks removed or 6 cups of canned or frozen corn
2 cups whipping cream
1/2 cup butter, melted
6 large eggs
1/4 cup plus 2 tablespoons sugar
1/4 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon kosher salt (add more or less)

Preheat oven to 350 F degrees.
Light grease or stray 13" by 9" baking dish. Set aside.

1. Cut corn off the cob, scrape milk and remaining pulp from cob; discard cobs (about 6 cups).

2. In small mixing bowl. Combine sugar, flour, baking powder and salt. Whisk well together. Set aside.

3. In large mixing bowl. Combine eggs, whipping cream and melted butter. Whisk well together. Add in dry ingredients (sugar mixture). Whisk well. Add corn, fold in gently.

4. Add corn mixture to prepare baking dish.

5. Bake 40-50 minutes or until golden on top.

6. Cool 20-30 minutes before serving.
