INGREDIENTS
1 lb cooked boneless skinless chicken breast, chopped or shredded (rotisserie works)
1 cup plain Greek yogurt
¼ cup fresh lime juice
Zest of 1 lime
¼ tsp ground cumin
¼ tsp smoked paprika
¼ tsp garlic powder or grated fresh garlic
½ tsp salt, plus more to taste
1 (15 oz) can black beans, drained and rinsed
½ cup corn, fresh or thawed and drained from frozen
¼ cup finely diced red onion
¼ cup chopped cilantro
