Ingredients
Water for boiling
1 No Star anise
5 No Cloves
8-9 No Black pepper corn
10 No Celery stems
2 No Bay leaves
1 Inch Ginger juliennes
5-6 No Garlic cloves
¼ Cup Carrot cubed
¼ Cup Spring onion chopped
Salt to taste
500 Gm Button mushroom
2 Tbsp Refined flour
1 Tbsp Vinegar
Water as required
100 Gm Rice noodles
A pinch of Ajinomoto
2 Tbsp Blue pea flower
1 Tbsp Oil
2 No Celery stems
1 Inch Ginger juliennes
1 Tsp Garlic chopped
Salt to taste
½ Tsp Black pepper powder
1 ½ Tbsp Soya sauce
¼ Tsp Ajinomoto
1 Tbsp Lemon juice
2 Tbsp Chilli oil
Method:-
1. In a deep pot, add water for boiling.
2. Add star anise, cloves, black peppercorns, celery stems, and bay leaves.
3. In a mortal pestle crushed ginger juliennes and garlic cloves then add water.
4. Add carrot cubes, spring onion, and salt.
5. Bring to a boil and simmer for 8–10 minutes to extract the flavors.
6. Add button mushrooms and cook for 3–4 minutes.
7. Now add ajinomoto n blue pea flower and bring it to a boil.
8. In a microwave-safe bowl, add the rice noodles and pour enough hot water to completely submerge them.
9. Microwave on high power for 8 minutes. Heat oil in a kadai over medium flame.
10. Add the ginger, garlic, and celery stems. Sauté for 30–40 seconds until fragrant.
11. Add the cleaned and sliced button mushrooms and stir-fry on high heat for 3–4 minutes, until they release their moisture and begin to brown.
12. Season with salt and black pepper powder, then toss well to coat the mushrooms evenly
13. Heat oil in a kadai over medium flame. Add the ginger, garlic, and celery stems. Sauté for 30–40 seconds until fragrant.
14. Add the cleaned and sliced button mushrooms and stir-fry on high heat for 3–4 minutes, until they release their moisture and begin to brown.
15. Season with salt and black pepper powder, then toss well to coat the mushrooms evenly.
16. Add soy sauce and ajinomoto to the sautéed mushrooms. Toss well and cook for 30 seconds to allow the flavors to combine.
17. Strain the blue pea flower broth through a fine sieve into a bowl, discarding the flowers. Reserve the clear blue-colored broth for the noodles.
18. Pour the strained blue pea flower broth into a serving bowl.
19. Add the cooked rice noodles to the broth. Spoon the soy-glazed mushroom and vegetable mixture over the noodles.
20. Drizzle with chili oil and finish with a squeeze of lemon juice, if desired.
21. Serve immediately while hot and enjoy your Pink Floyd Noodles.
