Sochiye... bahar baarish ho rahi hai, khidki ke paas baithkar ek plate garma-garam crispy moong dal pakodi, upar se thandi dahi, khatti-meethi imli chutney, teekhi hari chutney aur crunchy sev. Har bite mein aisa swaad jo seedha dil jeet le! 🤤

Ingredients
2 Cup – Soaked moong dal
2 NO – Green chili
½ Inch – Ginger
1 Tbsp – Chopped coriander
½ tsp – Asafetida
Salt to taste
1 Tbsp – Split gram flour
2 Cup – Curd
2 Tbsp – Sugar
1 Tbsp – Rose water
Water as required
1 Tsp – Black salt
Oil for frying
1 Tsp – Cumin Powder
1 Tsp Chat Masala
½ Black pepper powder
1 Tbsp – Tamarind chutney
1 Tbsp – Green chutney
2 Tbsp – Sev

Method:-
1. Soak the moong dal for 4–5 hours or overnight. Drain the water.
2. Grind the soaked moong dal with green chilies, ginger, asafetida and chopped fresh coriander into a thick, smooth batter using very little water.
3. Transfer the batter to a bowl. Add salt and gram flour and mix well until combined.
4. In another bowl, whisk the yogurt until smooth. Add sugar and a few drops of rose water. Mix well and refrigerate until chilled.
5. In a separate bowl, prepare soaking water by adding water, black salt, and a pinch of asafetida . Keep it aside.
6. Heat oil in a deep pan. Drop small portions of the batter into the hot oil and fry until the pakodis are golden brown and crispy.
7. Remove the pakodis from the oil and immediately place them in the prepared asafetida and black salt water. Let them soak for a few minutes.
8. Gently squeeze out the excess water from the pakodis and transfer them to the chilled yogurt mixture. Allow them to absorb the yogurt before serving.
9. For plating, arrange the yogurt-coated pakodis on a serving plate. Sprinkle chaat masala and roasted cumin powder over them. Drizzle tamarind chutney and green chutney, then garnish with sev.
10. Serve immediately and enjoy your delicious Moong Dal Pakodi Chaat.
