Homemade Creamy Yogurt
This recipe yields approximately 2 litres of plain yogurt. It is smooth, mild, and significantly cheaper than store-bought versions.



Ingredients
2 Litres Milk: Whole milk is best for a thick texture, but 2% works too.
200ml Plain Yogurt: Ensure it contains "Live Active Cultures" (this is your "starter").

Equipment
Large heavy-bottomed pot
Kitchen thermometer (highly recommended)
Whisk
A warm spot for incubation (oven with the light on, or a thick towel)



Instructions
Scald the Milk:Pour the 2 litres of milk into your pot. Heat it over medium heat, stirring occasionally to prevent a skin from forming or the bottom from burning. Bring it to 82°C (180°F).Why? This "denatures" the proteins so they tie together, making the yogurt thick rather than runny.

Cool it Down:Remove from heat and let it cool until it reaches 43°C–46°C (110°F–115°F).Tip: Place the pot in a sink of cold water to speed this up—it usually takes about 5–10 minutes this way.

Temper the Starter:Place your 200ml of yogurt in a small bowl. Add about half a cup of the warm milk to the yogurt and whisk until smooth. Pour this thinned mixture back into the large pot of milk and whisk gently to combine.

Incubate (The Magic Step):Cover the pot with a lid. You need to keep this mixture at roughly 43°C (110°F) for 6 to 10 hours.
Method: Wrap the pot in two thick bath towels and place it inside a turned-off oven with the oven light turned on. The light bulb provides just enough heat.

Check and Chill:After 6 hours, gently jiggle the pot. If it looks like a soft jelly, it’s done! If it's still liquid, leave it for 2 more hours. Once set, put it in the fridge immediately. Do not stir it yet. Let it chill for at least 4 hours to fully firm up.



Pro Tips for Success

Don't Add Starter to Hot Milk: If the milk is above 48°C (118°F), it will kill the bacteria in your 200ml of yogurt, and it won't set.
The "Tang" Factor: The longer you let it sit in the warm oven (up to 12 hours), the sourer/tangier the yogurt will taste. For a mild flavor, aim for 6–7 hours.

Save Some for Later: Before you eat this batch, scoop out 200ml and put it in a small jar. This is your "starter" for your next 2-litre batch!

Avoid Movement: While the yogurt is incubating, don't move, stir, or bump the pot. The bacteria need a still environment to build their structure.

The Best Choices

Whole Milk (Full Cream): The gold standard. Gives you the thickest, creamiest texture.

Standard Pasteurized: The regular refrigerated kind. It gels perfectly.

Homogenized: Ensures a smooth, uniform consistency without a fat layer on top.

❌ What to Avoid
Ultra-Pasteurized (UHT): Often labeled "long-life." It’s heated too high, which weakens the proteins and results in runny yogurt.
Skim/Low-Fat: Works, but will be much thinner and more watery.
Raw Milk: Must be boiled first to kill "wild" bacteria that compete with your starter.

💡 Pro Shortcuts
For Extra Thickness: Whisk in 3–4 tablespoons of milk powder per litre of milk before heating.
The Golden Rule: High fat + High protein = Thicker yogurt.
