Is recipe testing a scam?

Someone who’s been on the Food Network (twice!) recently said if you simply “understand the ratios in baking” you can create any recipe and no one needs to test it out to know if it’ll work.

Clearly, I passionately disagree! I’ve been publishing recipes online for home bakers since 2009. Ratios and bakers percentages are only the starting point.

When you see me make a published recipe on camera, my team and I have already made that recipe multiple times. We don’t just make sure the recipe turns out amazing, we test to see:

➡️ how long did prep and bake times take?
➡️ can it be made ahead?
➡️ how many servings does it yield?
➡️ what equipment or ingredients can be swapped?
➡️ do the instructions make sense? Are they easy to follow? Is there room for misinterpretation?

And sooo many other variables! Baking is a science, you have to prove the results (repeatedly) in the lab 😛
